I have been wanting to try this recipe for a while now, and finally when baby girl was asleep in the wrap, and I had my food processor out, I figured its the perfect time, to try this easy, low key recipe! 
Lets face it, caramel is probably the best thing in the world! Well maybe, second best to chocolate!!! Well ok third best to coffee! It is in the top 5 for sure! Caramel is quite easy to make once you tried it a few times, but once again, I wanted to create something healthier, with more nutrients and less of a glycemic impact, And I think it worked well! Being super simple is an extra bonus! 
Remember its not going to be your standard caramel, as there is NO sugar of any kind in it, the only source of sweetness are dates, so the end product resembles   more of a caramel spread then syrup, non the less, it will be delicious on a cheesecake, pancakes, waffles, or as a dip for fruit. try it once, and I am sure you will find a delicious way to consume it!
And guarantee your kids would love it!!!
Ingredients:
1/2 cup of dates
1 can of coconut milk 
1 pinch of Himalayan sea salt
1 teaspoon of vanilla extract.
Directions:
In a food processor combine the dates and coconut milk.
Process until resembles a paste.
Transfer into a sauce pan bring to a boil, then lower the temperature and let simmer for 30 min.
Make sure to stir regularly so it wont stick to the bottom of the pan.
At the end, add vanilla and a pinch of salt, mix well, and transfer into a jar to cool. 
The spread will thicken after it cooled off! Enjoy!
